View Full Version : Easy Good Egg Casserole that Will Travel Well

Long story short, I am now bringing Christmas Day brunch to a bunch of people who have recently lost a (young) loved one. I'm thinking bagels and lox, fruit salad, and an egg casserole we can heat up once we get there. The drive is about two hours.

Anybody have ideas for an easy good egg casserole that will travel well?

There are lots listed online, but I know a lot of you have experience with making these.

The simplest and it would travel and reheats are on line.
Milk/cream mixed with eggs and just poured in casserole over
bread/cooked veggies/cheese/meat
I am sorry I don't have measurements because it is one of those use what I have in fridge things.
The only thing is that I only use like one bagel or two slices of bread or a couple of english muffins when
a lot of the recipes call for a lot of bread (I just don't like it that way).
The whole thing needs to sit for a bit before you cook to let the bread absorb the milk/eggs
And, I find it is better with cream or whole milk because it is less watery....cook till firm.

Delicious and reheats even one piece at a time in the mircowave
