Rice Salad

[Amaranth]

Once at a potluck, we had a rice salad with shredded carrots, raisins, and curry in it among other things. It was delicious, and people liked it so much that there was not a grain of rice left to take home. Was not able to find the person who made it to get a recipe.

Does anyone have a recipe for something like this or any other favorite rice salads?

2 pieces ginger root, peeled and minced
2 cloves garlic, minced
1 c. sliced onions
1 bunch carrots, julienne sliced
1 green pepper, diced
1/3 c. cashews
1/3 c. raisins
1-2 tbsp. curry powder
Juice of 1 orange
2 tbsp. mango chutney, chopped
6 c. cooked rice
