I usually hate fussy prep, but I hate paying for blanched whole almonds even more.
I can't believe I have never done this before or knew it was so easy. To get those skins off, boil the almonds for exactly 60 seconds. Then plunged in cold water to cool. The skins come right off! Just squeeze them and the nut squirts right out!
Bonus: the skins in my compost bucket.
