I have stopped buying canned beans & now cook my own from dried. However, many recipes I look up call for a can of beans (15 oz.) If I froze them in 2 c. servings to use in recipes, would that be about right for a can of beans?

Yes, that would be about right. I've used home-frozen beans to replace canned before, and it works well.

Yes, and there's no harm in using more beans than called for, usually!

Sure I do that all the time...like Rosemary says it would rarely hurt to add more beans!!

Yes -- I've even measured (because I'm a geek) and a can of beans, drained, often comes out to right around 2 cups. So you're spot on.
