Watermelon pickles?

I'm considering making watermelon pickles, even though I've never had them. I don't want the rind to go to waste after I cut open my last watermelon of the year. I hope it's worth it. Has anyone had them, and did you like them?

Love them! I grew up with them, it's been years since I had any but they always ranked high on my list.

My grandmother always made them. I thought they were pretty good, but not so good that I've ever made them myself.

They are good! I've made them several times. It can be a bit of a hassle if the watermelon has a thin rind, but otherwise, definitely worth the effort. Good luck!

Well, I've got them started, and now they have to soak overnight. I should get 3 1/2 pints out of what I've got. I'll see how fast we go through those jars. That should tell me if I'm going to make them again next year.
