Quinoa Salads
1.
3 cups cooked quinoa (follow package directions)
1/2 cup black beans (or chickpeas if you prefer)
1 cup diced fresh tomatoes or cherry tomatoes
1/4 cup diced green onions
1 tsp garlic powder, sea salt, basil
olive oil and lemon juice (or vinegar) to taste
2. (totally different taste)
3 cups cooked, cooled quinoa
1 cup pecan pieces
1 cup dried cranberries
1 cup shredded carrots
olive oil or canola oil to coat, sea salt to taste.
Quinoa lends itself to lots of mix-ins as a salad. Every time I make it I throw something different in it, but these are my two basic recipes that I start with.
OOOO, these ideas sound good. I have to get back to a more vegan diet. DH was facing health issues so we ate what he felt he could get down his throat and tolerate smell-wise but it is time to think about what is right for me to eat.
