Easy as A-B-C Healthy Recipes
Are you looking for simple, quick, healthy, and delicious recipes? I sure am! Sometimes, finding them seems like an impossible dream!
Do your family members have varied eating styles? Mine do! In my own family, I’m a vegetarian, one of my brothers is a vegan, and several others eat meat. Creating a meal that everyone likes can be challenging!
Would you like to learn more about nutrition? I would! We already know the important rolediet (http://www.webmd.com/food-recipes/tc/healthy-eating-overview) plays in achieving and maintaining health, but it’s also important to know what we should be eating and why.
Would you like to learn some techniques that will make cooking simpler and faster and also minimize cleanup? I know quite a few of these, and I’m always on the lookout for more.
I am giving myself the challenge of addressing all of the above for our readers and myself! Here’s the plan: I’m going to create a cookbook with 26 chapters - one for each letter of the alphabet, starting with “A” Is For Apple and going right through to “Z.” (Sue Grafton (http://en.wikipedia.org/wiki/Sue_Grafton)‘s excellent mystery series inspired me to take this approach.) Each chapter will feature all of these:


Information about a particular food (for example “apple”). For every food in their list, they provide a wealth of information: health benefits, nutritional profile, health benefits, how to select and store, tips for preparing and cooking, how to enjoy. I’ll include links to their pages.

Recipes that feature the food and are simple, quick, healthy, and delicious – an entree, a dessert, a snack, just about any category.
Tips to make the preparation simpler and faster and also minimize cleanup.
Ideas about how to adapt the recipe for vegans and vegetarians. (Lots of meat eaters also love many of my recipes.)

Suggest some foods to be included. What would you like to have for the letter “C”, “D”, etc.? Anyone who can suggest a food for “X” or “Z” deserves special recognition!
If you like, suggest a specific recipe, or even a recipe type, to go along with your letter. For example, would you like me to do “C” is For Cauliflower, or ”C” is For Chocolate?


Each chapter will be presented as its own blog post. Every time a chapter is published, it will be listed on this page, along with a link to the post. The first chapter will be “A is For Apple” and will feature a delicious Waldorf salad.

For Z, how about 'za, pizza with either a flatbread crust or similar more-healthful base (whole grain, lighter, etc.) and a variety of toppings? Easy to prepare, quick to cook, generally popular if it meets with dietary restrictions.

The recipe I chose for “F” features flax seeds. You most likely have heard a lot of hype about flax seeds. You may have wondered just how to incorporate this important food into your diet. Two tablespoons added to your cold or hot cereal, pancakes, and waffles, or baked into your breads, muffins, and quick breads brings you the amazing nutritional benefits of omega-3, lignans, and dietary fiber. Here I use it in Flax-Oat -Pumpkin Squares.

"G" Is For Ginger: Crystallized Ginger Gingerbread

The recipes here are meant to be served together. The first recipe is for Crystallized-Ginger Gingerbread, and the second is for Honey and Spice Poached Pears to accompany the gingerbread.
This is a dessert that you might find in a very fine restaurant. It's elegant and spectacularly delicious! At the same time, it is quite healthful, and so easy to make!
