Probably the easiest hors D'oeuvres - Little Smokies - wrap lean bacon around little beef smokies. Line a tight single layer in a casserole dish. Cover with brown sugar and pack down. Bake for about an hour at 350 - until the desired crispiness of the bacon. Drain off the fat/excess sugar. With toothpicks dip in a variety of mustards. Meat eaters seem to really like it, but I am a vegetarian and end up fixing it for everyone else in the family.
cut jalapenos in half lengthwise. Fill with cream cheese and fill into the hollowed out pepper shells. (leave stems on) wrap with a half or third piece of bacon (or none at all) and bake on a rack for 30 to 45 minutes till the bacon cooks. Not so long without the bacon. If no bacon, I like to sprinkle the pepper boats with some shredded cheese. Serve immediately.
Mexican cucumbers: Peel cumbers and slice thin. arrange on a plate not over lapping much. Drizzle with fresh lime juice. Salt lightly with kosher or sea salt just before serving. a sprinkle of finely chopped cilantro is nice too. serve as an appetizer. Easy, tasty, cheap and healthy. Oh. don't forget the tapatio!
