View Full Version : Thrifty 3 Bean Salsa Salad

Have been making this 3 Bean Salsa Salad lately, it is so delicious and colorful. It can be eaten as a salad, or for a dip for tortilla chips, or as a topping for tacos. It is easy to make, costs significantly less than $1 a pound, and is healthy and low fat.
Recipe for 3 Bean Salsa Salad
3 cans, well drained, of various beans of choice: I use black beans, Northern white, and kidney. Aldis usually around 59 cents a can, or you can make your own from dried beans (soak overnight and cook next day in crockpot for very little energy usage). Make sure to freeze the bean broth you drained out, and save for making bean soup on a later occasion.
1/2 onion (any kind) about 1/2 cup, chopped or grated fine. Aldis usually on sale for $1 or so for a 3 pound bag. Slice off the root end and plant in a pot for free onion tops later.
3 garlic cloves, grated
1/2-1 bunch cilantro (on sale for from 50 cents to $1 a bunch) chopped. Grow your own cilantro in a pot! If you buy one pkgs. of seeds it can last forever because when the plant finally goes to flower, just save the seeds and replant! And give some plants to your friends!
2-3 tomatoes ( $1 a pound on sale), diced
1/4 green pepper or banana pepper, diced.
juice and zest of one lime (usually on sale for 10 or 15 cents each around here)
If you desire, you can add one avocado, chopped, or some other type of hotter pepper to make it spicier.

Stir all ingredients, put in glass bowl in fridge. Keeps for a few days but probably won't last that long! Serve with tortilla chips. May also be eaten as a salad or on a salad or tacos. Yum!

Sounds delicious and healthy! The only thing is -- buy organic corn chips otherwise you're eating a GMO product...

Good point, will have to start doing that.
